SPINACH ARTICHOKE MACARONI AND CHEESE


My granddaughters are going to get to try this soon!!! I'll have to pick out the artichokes from their servings and make the sacrifice to put them on my own plate :) I ate a good dinner but my mouth is watering all because of your fabulous pictures!!!

Ingredient :
  • 2 cups dry pasta
  • 1/2 cup chopped artichokes
  • 1/2 cup chopped and packed fresh spinach
  • 1/2 cup chopped onion
  • 3 large cloves of garlic
  • 8 oz. cream cheese, softened
  • 1/4 cup parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded swiss cheese
  • 1 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 2 tablespoons cornstarch
  • 1 cup half and half (heavy cream or regular milk would also work)

Intructions :
  1. Brush the casserole plate and heat the oven to 400ºF.
  1. Cook the pasta according to the package instructions and drain it.
  1. Combine all the ingredients in a large bowl except for 1 cup of mozzarella for the top and half and half. Add to the cooked and dried paste and stir until smooth and the cream cheese melted. Add half and half.
  1. Pour into an oily and topped casseroled plate with leftover cheese. Bake for about 30 minutes.
